Toddy, a traditional drink popular in parts of southern India, is made by fermenting the sap obtained from palm trees such as Coconut palm or Date palm. The natural fermentation by microorganisms converts the sugars in the sap into alcohol, giving toddy its characteristic mildly alcoholic taste.
